GENERAL STATEMENT OF DUTIES
Supervises inmates and performs general baking duties and prepares desserts in a penal institution; performs related duties as required.

COMPLEXITY OF DUTIES
Under general supervision, the duties require the exercise of judgment in planning type and qualities of baked goods; duties require sound judgment in maintaining institutional security.

TYPICAL DUTIES
1.Prepares and measures ingredients for baking.
2.Bakes bread, cakes, pastries and biscuits.
3.Operates and uses baking equipment and utensils.
4.Prepares jello, puddings, custards and other desserts.
5.Supervises and instructs inmate food service workers.
6.Insures that all utensils and work areas are kept clean and orderly.
7.Inspects inmates for contraband and maintains security at all times.
8.Performs duties as a Correction Officer on a temporary basis, as required, at the discretion of the Sheriff or his designated officer.

FULL PERFORMANCE KNOWLEDGES, SKILLS, AND ABILITIES
1.Considerable knowledge of the materials, methods and equipment used in institutional baking.
2.Knowledge of general safety and sanitary precautions and regulations.
3.Ability to learn the use and care of firearms.
4.Ability to prepare a variety of baked goods and desserts.
5.Ability to supervise and instruct inmate food service workers and maintain security precautions.
6.Ability to keep simple records and to follow oral and written instructions.

MINIMUM QUALIFICATIONS
Training and Experience
Completion of grade school education
and
Two years of satisfactory baking experience in an institution or large commercial establishment.

Necessary Special Requirement
Candidates for this title cannot be approved until they have satisfactory Civil Service medical and psychological reports.
