GENERAL STATEMENT OF DUTIES
Directs the preparation and serving of food in a penal institution; performs related duties as required.

COMPLEXITY OF DUTIES
Under general supervision, the duties require planning, organizing and directing the activities of subordinate kitchen personnel and inmates.

TYPICAL DUTIES
1.Directs and coordinates the work of cooks, bakers and inmate food service workers in the preparation, cooking and serving of foodstuffs.
2.Oversees and insures that kitchen, dining area and utensils are maintained in a clean, safe and orderly manner.
3.Prepares menus; requisitions foodstuffs and supplies and supervises the receiving, inventorying and storage of foodstuffs.
4.Insures that security precautions are maintained at all times.
5.Orients and instructs new cooks, bakers and inmate food service workers.
6.Keeps personnel, supply and equipment records and prepares reports.
7.Performs duties as Correction Officer on a temporary basis, as required, at the discretion of the Sheriff or his designated officer.

FULL PERFORMANCE KNOWLEDGES, SKILLS, AND ABILITIES
1.Thorough knowledge of the methods, materials and equipment used in institutional food preparation.
2.Considerable knowledge of general safety and sanitary precautions and regulations.
3.Knowledge of the principles of dietetics and nutrition.
4.Ability to learn use and care of firearms.
5.Ability to direct and coordinate the work of subordinate personnel and inmates in the preparation, cooking and serving of foodstuffs.
6.Ability to supervise the cleaning of the kitchen and dining area and the maintenance of security precautions.
7.Ability to keep records and prepare reports.

MINIMUM QUALIFICATIONS
Training and Experience
Graduation from high school or vocational school
and
Five years of food preparation and working experience in an institution or large commercial establishment including one year in a responsible supervisory capacity.

Necessary Special Requirement
Candidates for this title cannot be approve until they have satisfactory Civil Service medical and psychological reports.
